Fish Fajitas a la Santa Barbara
Add the olive oil to a regular, heavy-bottomed pan.
Add all chopped ingredients, sauteing for 1-2 minutes.
Then add filets into the pan with the vegetables and squeeze lemon or lime over everything.
Cover with saucepan with lid.
Cook on medium for about 10-12 minutes.
Uncover the pan, and use a spatula or fork to break apart the fish into bite-size peices.
Let simmer a few more minutes, add salt and pepper to taste.
Heat tortillas and spoon mixture onto tortillas, using a slotted spoon or spatula to allow extra juice to stay in pan.
Roll up tortillas and enjoy!
